Banana Bread Muffins

BANANA BREAD MUFFINS

1/2 cup soft butter
1 cup brown sugar
2 eggs
2 overripe bananas
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
1 1/2 tablespoons sour milk or buttermilk
1 cup chopped walnuts or pecans (optional)

Preheat oven to 350ยบ.
Put paper liners in 12 muffin cups.

Mix the butter, bananas, and sugar together in a mixing bowl.
Add eggs, vanilla, and milk. Stir well.
Add flour, salt, soda, and baking powder. (Nuts too, if you are using any.) Mix together without too much vigorous stirring.

Fill the muffin cups about 2/3 full, and bake about 20 – 25 minutes. Tops should be golden colored, and muffins should be springy when pressed lightly.

Serve warm or cool.

This recipe can also be put into a regular size loaf pan and baked for about one hour, or until springy in the middle.
