Laurel's Pumpkin Pie


Mix together and press into glass pie plate:

1 cup crushed walnuts
1 cup almond meal
1/4 cup melted butter
1 teaspoon salt
1 - 3 tablespoons honey if you want a slightly sweet crust

Mix together and pour into crust:

3 cups cooked pumpkin
3 eggs beaten
1 can full fat coconut milk
3/4 cup brown sugar or 1/2 cup honey
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon cloves
½ teaspoon salt

Do not overfill.

Bake at 350 for 20 minutes. Reduce heat to 325 and bake for 50 minutes or until the custard is set.
